Traditionally used as a salad green, Arugula is a member of the mustard family, which might account for its delicious, peppery taste. It has been grown and appreciated for centuries for its culinary uses. This subtly spicy green is not only tasty, but good for you too. Arugula is high in vitamins A and C and very low in calories (only two calories per ½ cup serving). This once seasonal specialty item is now available year-round in IQF form and is being brought to new heights!
IQF Arugula can be used anytime to season pizza for an upscale look and flavor. Add it to bruschetta for a peppery bite that plays effectively against bread and cheese. Arugula is also happy with legumes, especially white beans, in soups or spread and it adds character to pestos, sauces, salad dressings and herbed cheeses. The IQF process retains the beautiful color, essential vitamins, and lively flavor of the green, while allowing for easy use and handling.
Van Drunen Farms offers IQF Arugula in fine and coarse cut format; customization is available.
